Fishing has been a part of my life for as long as I can remember. Growing up on the water, I developed a deep appreciation for the sport, the challenge, and the pure excitement that comes with every catch. My love for fishing runs deep in my family—my grandparents owned Martino’s Restaurant on Lakeshore Road in Cicero, NY, right on the shores of Oneida Lake. They were also the founders of the Martino Perch Pirates, a group dedicated to perch fishing and the camaraderie it brings.
While perch fishing is in my roots, my passion for muskie fishing has grown stronger over the years. There’s nothing quite like the thrill of chasing these elusive giants, and I’ve spent countless hours honing my skills in pursuit of the next trophy fish. The St. Lawrence River is more than just a body of water to me—it’s a way of life. Its powerful currents, stunning scenery, and world-class muskie and walleye fishing make it an angler’s paradise.
Walleye fishing has also been a driving force in my journey, pushing me to refine my techniques and outsmart these prized fish. Whether it’s a crisp summer morning trolling for walleye or a brisk fall afternoon targeting monster muskies, every trip brings a new adventure. A St. Lawrence River Fishing Tradition: The Shore Dinner
The Shore Dinner is more than just a meal; it embodies a rich tradition among anglers on the St. Lawrence River, celebrating the joys of fishing and camaraderie. For many, the experience extends beyond finding the best fishing holes and reeling in the biggest catch to savoring a delicious, freshly prepared dinner by the water.
To kick off this cherished ritual, an experienced fishing guide often starts by building a roaring fire, essential for cooking and ambiance. Once the flames are crackling, the guide sets about boiling water for coffee while unpacking a carefully curated picnic basket filled with various ingredients: sugar, butter, and cream, potatoes, corn on the cob, and fresh lettuce.
The day’s catch is also cleaned and prepared, ensuring the meal consists of the freshest fish possible. The first course typically features fatback sandwiches. This dish involves frying fatback, a flavorful part of the pig, until it’s crispy. Once ready, it’s served alongside sautéed onions on plain white bread, often accompanied by a crisp salad dressed in traditional Thousand Islands dressing.
Next comes the highlight of the Shore Dinner: fried fish. The freshly caught fish is lightly breaded and fried in the leftover fatback grease, creating a golden, crispy exterior that contrasts perfectly with the tender fish inside. This course is usually served with salted potatoes and sweet corn, making it a wholesome and hearty part of the meal.
Finally, the dinner culminates with a delightful course of French toast, which has become the signature dessert. Made with eggs, sugar, and cream, the bread gets a generous batter coating before being fried in the same grease, resulting in a delicately puffy creation. It’s often drizzled with maple syrup and cream, sometimes accompanied by a splash of brandy.
As the meal concludes, guests enjoy a strong cup of fisherman’s coffee while soaking in the stunning views of the St. Lawrence River, reflecting on the day’s adventures.
